关于行政总厨Pierrick Maire

出生于法国马赛的主厨Pierrick Maire于2019年受邀担任璞麗酒店行政总厨一职。他有着近15年的烹饪经验,曾在多家法国米其林星级餐厅任职工作。作为行政总厨,Pierrick负责把控酒店所有的餐饮出品,包括于酒店的当代法式餐厅斐霓絲餐厅酒吧、长吧、露天花园及客房送餐。

 

主厨Pierrick聚焦于优质、新鲜的食材本身,展现简约本真的独特滋味。凭借极佳的天赋与创造力,他将继续为宾客呈献有关食物的美好记忆,并成为上海餐饮业界一股不可小觑的新生力量。

斐霓丝餐厅位于璞麗酒店二楼,俯瞰静安公园。餐厅精选顶级新鲜食材烹制独具特色的当代法式料理,融简约与典雅于一身。菜品由行政总厨Pierrick Maire先生以现代烹饪方式精心烹制,囊括从法国进口的烟熏肉及生蚝、高品质素食、肉食及海鲜等各色佳肴美馔。餐厅同时设有一个结合酒吧与休闲功能于一体的会客区域,主要供应经典鸡尾酒及葡萄酒。宾客们可以选择在餐前或餐后在此悠然小酌,尽享精致佳酿。主就餐区位于餐厅的两侧,除提供单点午餐及晚餐外,还有每日特选可供选择。餐厅特别甄选出250款以法酿酒为主的酒单,搭配多种精美奶酪与甜品,为每一位宾客带来完美的就餐体验。

in 2021 Michelin Guide Shanghai for fifth consecutive year

 

PHÉNIX eatery & bar is pleased to announce that it has yet again been awarded One Michelin Star in The Michelin Guide Shanghai 2021 edition.

 

Opened in April 2016, the restaurant is rooted in the philosophy of “Life is about the ingredients”, focusing on the richness of seasonal, natural ingredients, offering a place where guests can discover essential French classics and modern interpretations through an authentic and sophisticated journey across Modern French Cuisine.

 

Brought to life by Executive Chef Pierrick Maire, whose uncompromising commitment to showcasing only the finest and highest quality ingredients lies at the very core of his culinary philosophy, Pierrick is no stranger to helming award-winning kitchens, continuing to play an integral role in leading the restaurant to its fifth consecutive Michelin star.

Hailing from Marseille, France, Chef Pierrick Maire started his tenure at The PuLi Hotel and Spa in 2019, bringing with him nearly 15 years of culinary experience, many of which were spent at Michelin-starred restaurants in his home country. In his role, he oversees the hotel’s culinary offering which includes the hotel’s modern French restaurant, PHÉNIX eatery & bar, Long Bar, Garden Terrace and Home Delivery.

 

Chef Pierrick aims to highlight the finest and freshest ingredients while embodying simplicity and authenticity. Known for his talents and creativity, he will continue to present to guests fantastic food memories and be a dynamic force in shaping Shanghai’s vibrant culinary scene.
