2021年《上海米其林指南》正式揭晓。上海浦东丽思卡尔顿酒店 金轩中餐厅 蝉联“米其林一星”,成为新一届米其林指南上海地区上榜的43间餐厅之一。上海浦东丽思卡尔顿酒店行政总厨克里斯·吉里诺先生、金轩中餐行政总厨黄英杰师傅及餐厅副经理徐睿应邀出席10月21日举办的米其林指南新闻发布会。

拥有逾百年历史并在业界备受瞩目的米其林指南,以其精准严格的评审标准深受美食爱好者们的青睐。在上海的第五年,米其林指南如约而来,对美食和生活的期待,一如既往热切鲜活。过去的一年中,在黄英杰师傅带领下,金轩的菜品除了传承一贯的粤式经典与融合创新以外,“可持续发展”这一理念也在不断的融入与实践中。这体现在对孕育本真好味的食材原产地的甄选以及为保护海洋生态系统而把控海鲜类食材的采购期。上海浦东丽思卡尔顿酒店行政总厨克里斯·吉里诺先生表示,“我为金轩团队感到自豪。这个奖项离不开团队每一位绅士淑女为宾客创造难忘体验所付出的努力;这份成绩也体现了丽思卡尔顿品牌对服务承诺的一贯坚持。”

拥有二十余年从业经验的金轩中餐厅主厨黄英杰师傅,加入上海浦东丽思卡尔顿酒店六年来已带领团队第四次摘得米其林一星餐厅称号。黄师傅表示,“能够持续获得米其林指南的认可,这份荣誉对我们是一种激励,也感谢团队每一位成员多年来对品质的坚持。我们将继续不断的提升团队的烹饪技艺,为宾客诚意打造难忘的用餐体验。”

黄师傅在钻研精细粤菜的同时,严格管理烹饪团队,并与金轩中餐厅侍酒师在内的服务团队共同为宾客呈现地道云端粤味。

JIN XUAN CHINESE RESTAURANT AT THE RITZ-CARLTON SHANGHAI, PUDONG AWARDED ONE STAR IN THE MICHELIN GUIDE SHANGHAI 2021


The Michelin Guide (Shanghai) 2021 officially unveiled its full list of Michelin Star recipients on October 21, 2020. Jin Xuan Chinese Restaurant at The Ritz-Carlton Shanghai, Pudong consecutively received a rating of one Michelin Star, being one of only 43 restaurants on the list. The Ritz-Carlton Shanghai, Pudong Executive Chef – Mr. Christophe Gillino, Jin Xuan Chinese Restaurant Executive Chef Daniel Wong and Restaurant Assistant Manager – Mr. Ryan Xu attended the press conference to receive this accolade.

 

The Michelin Guide is known around the world for its strict standards on restaurant and dining experiences. In its fifth year in Shanghai, the Michelin Guide has arrived as promised, and the expectations of gourmets are as lively as ever. In the past year, the concept of “sustainability and responsible gastronomy” has been constantly integrated and practiced in Jin Xuan’s menu, in addition to inheriting classic Cantonese cuisine and incorporating innovation. Ingredient sourcing is carefully implemented, and the procurement period of seafood is precisely controlled to protect the marine ecosystem. At the awards ceremony, Mr. Christophe Gillino, the Executive Chef of The Ritz-Carlton Shanghai, Pudong said, “I am proud of the entire team at Jin Xuan for achieving this wonderful honor. With over 20 years of experience in the field of culinary arts, Chef Daniel Wong has spent six of them at The Ritz-Carlton. Over the course of his career at The Ritz-Carlton, he and his team of extraordinary ladies and gentlemen have been awarded the Michelin Star four times. Chef Daniel Wong stated, “It is an honor to be recognized by the world-renowned Michelin Guide. I would like to thank each member of the team for their continuous commitment to culinary excellence over the past years.” He continued, “This recognition is also a motivation. I will ensure we carry on our dedication to crafting an exceptional dining experience for our guests at Jin Xuan Chinese Restaurant.”

 

Chef Daniel focuses on creating exquisite Cantonese dishes and bringing a unique dining experience to each guest. Jin Xuan Chinese Restaurant enjoys an enviable location on the 53rd floor of the hotel, overlooking The Bund and The Oriental Pearl Tower. The restaurant was designed by the renowned interior designer and architect, Steven Leung from Hong Kong. Jin Xuan Chinese Restaurant is known as “the restaurant in the air”. Not only does it tempt its guests with a breathtaking view from 53 floors above the city, but it also offers those same guests a genuine taste of Chinese Cantonese cuisine. These sights and tastes are guaranteed to create a lasting experience that any guest will not soon forget.

 

Jin Xuan Chinese Restaurant launches its 2021 Michelin Tasting Menu with eight signature dishes from Chef Daniel, including boiled crab meat soup, bamboo fungus, black truffle. This dish is highlighted by the delicate flavour of crabmeat soup and how it blends effortlessly with the fragrance of black truffle. Also on the menu are crispy cereal lobster and wok-fried wagyu beef. The menu is served with a glass of welcome champagne, presented by Perrier-Jouët Blason Rosé, to complement your sumptuous fare.

The Ritz-Carlton Shanghai, Pudong was opened on 21 June 2010. It is the luxury hotel brand’s second hotel in the city, and it’s seventh in China. Located in Shanghai IFC, the prime real estate in Lujiazui financial and entertainment center, the hotel complex is the masterpiece of world famous architect designer, Cesar Pelli.

The 285-room Ritz-Carlton Shanghai, Pudong occupies the top 18 floors of the Shanghai IFC Tower I.
